I make this for dinner at least once a week. It always hits the spot and tastes delicious. It’s great to eat as a light main dish or as a side dish served with chicken.
Healthy Cous Cous- Veggie Saute
- 1 C. cooked cous cous, pearl
- 1 C. spinach
- 1 C. carrots, sliced (I use frozen)
- 1 C. corn
- seasonings: salt, pepper, garlic powder
- Add corn and carrots to skillet over med/high heat and cook until tender. Add spinach and cous cous.
- Season with salt, pepper and garlic. Remove from heat and serve immediately
* It’s great topped with a small amount of shredded mozzarella cheese!
