Hello! I hope everyone had a wonderful weekend. Mine was spent running errands with the family, buying supplies for an upcoming DIY project (so excited!!!), baking, decorating and eating a (late) birthday dinner at Bonefish with my parents.
So we have recently gotten a Costco where I live and I just LOVE it. I got a HUGE bag of Organic quinoa for around $8 and an equally large bag of chocolate chips for I think around $7? That is awesome, if you buy quinoa then you know it is NOT cheap- so I was very excited about that.
Yesterday we also went to Target for a grocery trip, and finished the night at Bonefish. Bonefish is hands down one of my favorite restaurants. The food is always excellent! Last night we started with bang bang shrimp, bread and then I ordered the cobb salad for my entree. Little man especially had fun look around at all of the people and eating cheerios and pieces of chicken from my salad.
On to the recipe…
I made this for dinner the other night and it was AMAZING! Hands down the best quinoa dish that I have made. Next time you are craving fried rice you should make this, much better for you and tasted delicious!
Quinoa Fried Rice For One (You could easily double or triple this)
- 1/3 C. dry quinoa
- 2 Tbs. asian sauce
- 1 zucchini, chopped
- 1/2 C. broccoli, chopped and stems removed
- 1/2 C. carrots, chopped
- 2 tsp. minced garlic
- 1/3 C. peas
- 1 egg
- 1 tsp. oil
- Cook quinoa according to package directions.
- In a pan, cook garlic and egg in 1 tsp. oil
- Add veggies to pan and cook until tender.
- Add quinoa and asian sauce and cook about 5 more minutes
- Serve immediately!
This is a big serving and I ate every single bite of it! (You probably will too!)
